This delicious Honey Ricotta Peach Crostini recipe is goingto wow your guests!!! This recipe is one of our summer favorites!!! We like to eat a light mid-day meal at the lake, and this recipe is filling enough to satisfy! Or you can serve it as an appetizers. They’ll be sooo happy you did!
Slice and fry the bacon until it’s crisp. Drain on a paper towel and allow to cool.
Slice the baguette into (24) ½” slices. Lightly spray a little olive oil over both sides of each of them. Place them on a preheated grill. You can also use your broiler to accomplish this step! Grill the baguette slices over medium heat 1-2 minutes until they start to get golden and crispy on each side, turn once. Remove the crostini from the grill and place them on a serving platter.
Rinse and dry the peaches. Then cut them into thin slices. Slice the fresh oregano into thin slices also.
In a small mixing bowl whisk together the ricotta and the honey.Spread about a tablespoon of honey cheese mixture on each crostini. Top with a few peach slices. Drizzle balsamic glaze over it all.Sprinkle the crispy bacon and the sliced basil over the top of everything.
