Instructions
Reduce the apple cider: Pour the apple cider into a small saucepan and simmer over medium heat until reduced to the amount called for in the recipe. Allow it to cool slightly.
Take out the egg and the milk to let it get to room temperature while the apple cider is being reduced.
Preheat the oven to 350°F. Grease a donut pan well with nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add the egg and vanilla and whisk until smooth.
Stir the reduced apple cider into the wet ingredients.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
Transfer the batter to a piping bag or a large zip-top bag with one corner snipped off. Pipe the batter evenly into the prepared donut pan, filling each cavity about two-thirds full.
