Cook pasta according to directions on package. Drain. Transfer to a large bowl and set aside.
While the pasta is cooking, mix together the Italian Seasoning, garlic powder, salt & pepper. Season the chicken breasts (I like to cut them in half lengthwise so they're thinner to cook) on both sides with this mixture. Heat 1 teaspoon oil in a large skillet and sear chicken over medium-high heat until browned on both sides. Continue cooking chicken about 6 minutes on each side until juices run clear and chicken in thoroughly cooked through. Remove from pan and allow to rest a few minutes.
Add the olive oil to the same hot skillet and sauté the garlic and red onion about 1 minute. Turn off heat. Add in the chopped tomatoes and toss lightly in skillet. Pour mixture over pasta in bowl. Add the vinegar, parmesan cheese and basil and/or parsley. Season with more salt & pepper to taste. Cut the chicken into slices and add to bowl. Toss the pasta with all of the ingredients until all is well mixed!
Top with 2 tablespoons extra parmesan and serve immediately with balsamic glaze drizzled over the top. You can also make this dish ahead of time, refrigerate, and serve cold!!!
