1box angel food cake mixprepared according to package directions
2cupsfresh cranberrieswashed and dried
For the Sweet Butter Sauce:
1cupheavy cream
1stick1/2 cup unsalted butter
3/4cupgranulated sugar
Instructions
Prepare the Cake:
Preheat your oven to the temperature specified on the angel food cake mix box.
Prepare the angel food cake batter following the package instructions.
Pour the batter into an ungreased angel food cake pan.
Evenly scatter the fresh cranberries over the top of the batter. The cranberries will sink slightly as the cake bakes.
Bake according to the package instructions until the top is golden brown and the cake springs back when lightly touched. Then allow the cake to bake an extra 5-10 minutes keeping a close eye on it so it doesn't get too dark. This will make the cake a bit firmer so it doesn't fall out of the pan during the next step!
Cool the cake upside down in the pan as directed, then gently release it from the pan.
Make the Sweet Butter Sauce:
In a medium saucepan, combine the heavy cream, butter, and sugar.
Heat over medium-low, stirring constantly, until the butter melts and the sugar dissolves completely. Do not let the mixture boil.
Keep warm until ready to serve.
Serve:
Slice the cooled cranberry cake and place on serving plates.
Drizzle the warm sweet butter sauce generously over each slice.
Enjoy!
Tips:
For an extra festive touch, sprinkle powdered sugar over the cake or add a few whole cranberries and a sprig of mint as garnish.
The sweet butter sauce can be made ahead and reheated gently before serving.
