1homemade pie crust or 1 refrigerated store-bought pie crust
3–4 medium ripe peachespeeled if desired and sliced (about 4 cups)
¼cupgranulated sugar
1tablespooncornstarch
½teaspoonground cinnamon
¼teaspoonvanilla extractoptional
Pinchof salt
1large egg
1tablespoonwater
1tablespooncoarse sugar or granulated sugar
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper.
Roll the pie crust into a 12-inch circle if needed and place it on the prepared baking sheet.
In a medium bowl, gently toss together the sliced peaches, sugar, cornstarch, cinnamon, vanilla (if using), and salt until evenly coated.
Spoon the peach mixture into the center of the crust, leaving a 2-inch border around the edges. Spread the peaches into an even layer and avoid adding excess liquid from the bowl.
Fold the edges of the crust over the peaches, overlapping slightly as you work around the circle. The center of the filling should remain exposed.
Whisk together the egg and water. Brush the folded crust generously with the egg wash.
Sprinkle the crust with coarse sugar or granulated sugar.
Bake for 40–45 minutes, or until the crust is deep golden brown and the peach filling is bubbling.
Let the galette cool for at least 15–20 minutes before slicing. The filling will continue to thicken as it cools.
