1 1/2cupsgrated zucchiniexcess moisture squeezed out

Lemon Glaze Frosting:
1cuppowdered sugar
2-3tablespoonsfresh lemon juice
1teaspoonlemon zest
Instructions
In a large bowl, beat the eggs. Add the plain yogurt, oil, sugar, lemon zest, lemon juice, and vanilla extract. Mix well until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the grated zucchini and chopped nuts (if using).
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
