Ingredients
4slicesof your favorite breadsourdough or brioche works great!
2-3ozBrie cheesesliced or spreadable
1ripe peachthinly sliced
4slicesof prosciutto
2tbsphoney
2tbspbuttersoftened
Optional: a pinch of fresh thyme leaves for garnish
Instructions
Prepare the bread
Spread butter evenly on one side of each bread slice.
Warm the peaches
Heat a small skillet over medium heat.
Add the peach slices and cook for 1-2 minutes on each side, just until they’re softened and slightly caramelized. Remove from heat and set aside.
Assemble the sandwich
Place a slice of bread, buttered side down, on a clean surface.
Layer slices of Brie cheese evenly on top.
Add a slice or two of prosciutto on top of the Brie.
Arrange the warmed peach slices over the prosciutto.
Drizzle with about 1/2 tablespoon of honey (or more if you like it sweeter).
Top with the second slice of bread, buttered side facing out. Repeat for the second sandwich.
Cook the sandwich
Heat a skillet or griddle over medium heat.
Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the Brie is melted. Adjust the heat as needed to avoid burning.
Drizzle and garnish
Remove the sandwiches from the skillet and let them rest for a minute.
Drizzle the top with more honey and sprinkle a few fresh thyme leaves, if desired.
Slice the sandwiches in half and serve warm. These pair wonderfully with a fresh side salad or a bowl of tomato soup.
