Peel and rinse sweet potatoes. Slice into 1/4" lengthwise strips.
Put strips into a large mixing bowl. Sprinkle cornstarch over potatoes and use hands to coat well. Drizzle olive oil over potatoes, and use hands to coat well also.
Place a single layer of potato strips onto 2 parchment-lined baking sheets. Don't overlap. Bake for 20 minutes and flip. Bake another 15-20 minutes until fries are a bit browned, bubbled, and have a matte finish.
Add additional seasonings if desired. Dip in your favorite sauce.
