1/2cupbutterreserve 1 Tablespoon to butter casserole
1/4cuponion, chopped
2cupsgrated parmesan cheesedivided, can use freshly grated or canned
salt and pepper
Instructions
Reserve 1 cup cheese to top the potatoes right before you place them in the oven.
Preheat oven to 375°
Use 1 Tablespoon of the butter to grease the inside of a large casserole dish.
Melt the butter. Add all ingredients together in casserole dish, mixing well. Cook in the microwave on high 10 minutes. You can also cook on the stove over medium heat for 10 minutes, stirring and being careful potatoes don't scorch to bottom of kettle.
With potatoes in casserole, sprinkle reserved 1 cup cheese over the top of them.
Bake in oven about 45 minutes, or until cheese on top has browned and potatoes are bubbly.
