Preheat oven to 350° F. Coat baking sheet with non-stick spray.
Crush crackers in a plastic bag using a rolling pin, or in your food processor.Transfer crushed crackers to shallow dish like a pie plate. Add salt and pepper and stir together.
Whisk milk and egg together in a small bowl to make an egg wash.Transfer egg wash to another shallow dish or pie plate.
Rinse pork chops and dry with a paper towel.Dip pork chop in egg wash to coat each side.Then dip egg-coated pork chop into cracker crumbs to coat each side with crumbs.
Add coated pork chops to skillet sprayed with non-stick spray or oil. Fry over medium to medium-high heat for 2-3 minutes on each side until pork chops are golden brown on each side.Transfer browned pork chops to baking sheet.
