2ripe peachesyou can also use frozen peach slices or peach puree if fresh peaches are not available
1tablespoonlemon juiceoptional
750ml bottleProsecco750 ml of chilled Prosecco or any other sparkling wine (Champagne can also be used)
Sugar or simple syrupoptional, to sweeten the cocktail if your peaches are not very sweet
Instructions
Peel and pit the ripe peaches. Cut them into small pieces. If using frozen peach slices or peach puree, skip this step.
Place the peach pieces into a blender or food processor. Add the lemon juice to enhance the peach flavor and prevent browning. Blend until you get a smooth puree. If your peaches are very sweet, you might not need to add any sugar. However, if you prefer a sweeter cocktail, you can add sugar or simple syrup to taste and blend again.
Transfer the peach puree to the refrigerator and let it chill for at least 30 minutes.
Take chilled champagne flutes or wine glasses and spoon about 2 to 3 tablespoons of the peach puree into each glass.
Slowly pour the chilled Prosecco over the peach puree in each glass. Be gentle to avoid excessive fizz and overflow. Leave some space at the top of the glass to allow for the bubbles.
Stir gently (optional): If you want a more consistent flavor throughout the drink, you can give it a gentle stir with a long spoon.
You can garnish the Peach Bellini with a fresh peach slice, mint leaves, or a raspberry for an extra touch of elegance.
