I must say that one of the most relaxing parts of my trip to Venice was sitting at a little café along the Grand Canal sipping on Peach Bellini cocktail (or two)!

A Peach Bellini is a delicious and refreshing cocktail that’s perfect for warm weather or special occasions. It’s made with Prosecco, a sparkling Italian wine, and peach puree.
Since getting home we’ve been missing this flavorful cocktail, so we began making out own Peach Bellini! In this post I’ll share just how easy it is to make this flavorful drink!

Where Did the Peach Bellini Originate?
The Peach Bellini has its origins in Italy!!
It was created in the mid-20th century by Giuseppe Cipriani, the founder of Harry’s Bar in Venice, Italy. Harry’s Bar, which opened in 1931, quickly became a popular spot for celebrities, writers, artists, and wealthy patrons.
The story goes that Cipriani created the Peach Bellini in the late 1930s or early 1940s.
The drink was inspired by the beautiful pink glow in a painting by 15th-century Venetian artist Giovanni Bellini.
To achieve the color reminiscent of the painting, Cipriani blended white peach puree with Prosecco, the popular Italian sparkling wine.
Originally, the cocktail was made using fresh white peaches, but variations with yellow peaches or peach puree have become popular over time.
The classic Bellini recipe has remained relatively unchanged since its creation, and it has become an iconic cocktail both in Italy and around the world.
Today, the Peach Bellini is enjoyed in various countries and is often served as a celebratory drink or during brunches and special occasions.
It has also inspired other fruit-based Bellini variations, such as strawberry, raspberry, and mango Bellinis.
Despite the variations, the Peach Bellini remains a timeless and delightful cocktail. And I might add one of my absolute faves!!!

Like I said, the main ingredients in a Peach Bellini are Prosecco, a sparkling Italian wine, and peach puree.
Where Can You Get Peach Puree?

Many larger grocery stores or supermarkets carry fruit purees in the frozen or canned fruit section. Look for the aisle that contains frozen fruits, canned fruits, or cocktail mixers. Sometimes, you may find peach puree in the international foods section or the section dedicated to mixers and cocktail ingredients.
Beverage Stores:
Specialty beverage stores or liquor stores that cater to cocktail enthusiasts may carry peach puree, especially during the warmer months when cocktails like Peach Bellini are popular.
Online Retailers:
You can find peach puree through various online retailers, including large platforms like Amazon or specialty stores that offer cocktail mixers and ingredients.
Farmer’s Markets:

Making this Peach Bellini Recipe
It doesn’t take long at all to mix up this refreshing adult beverage! Follow these simple steps and you’ll be sipping on one in no time!
Prepare the peaches:
Peel and pit the ripe peaches. Cut them into small pieces. If using frozen peach slices or peach puree, skip this step.
Blend the peaches:
Place the peach pieces into a blender or food processor. Add the lemon juice to enhance the peach flavor and prevent browning. Blend until you get a smooth puree. If your peaches are very sweet, you might not need to add any sugar. However, if you prefer a sweeter cocktail, you can add sugar or simple syrup to taste and blend again.
Chill the puree:
Transfer the peach puree to the refrigerator and let it chill for at least 30 minutes.
Assemble the Bellini:
Take chilled champagne flutes or wine glasses and spoon about 2 to 3 tablespoons of the peach puree into each glass.
Top with Prosecco:
Slowly pour the chilled Prosecco over the peach puree in each glass. Be gentle to avoid excessive fizz and overflow. Leave some space at the top of the glass to allow for the bubbles.
Stir gently (optional): If you want a more consistent flavor throughout the drink, you can give it a gentle stir with a long spoon.
