Instructions
Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone baking mats.
In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract to the mixture and continue beating until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix the dough.
Shape the dough into 1-inch balls. Roll each ball in granulated sugar, and then place them on the prepared baking sheets, spacing them about 2 inches apart.
Bake the cookies for 8-10 minutes or until they are lightly golden. Remove them from the oven.
Immediately press a chocolate kiss or star into the center of each cookie, gently pressing down until the cookie cracks around the edges.
Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
Repeat the process with the remaining dough, baking one batch of cookies at a time.
