Remove meat from rotisserie chicken. Chop or shred. Measure about 2 cups meat.
Heat skillet over medium heat. Add a small amount of oil, just enough to lightly coat the pan.Place tortilla in skillet. Sprinkle 1/4 cup cheese over the tortilla, and place some red onion slices over the cheese. Add 1/2 cup chicken over half of the tortilla.
Allow tortilla to brown, this takes only 1-2 minutes. Peek under the tortilla to check it! Flip in half to make a semi-circle quesadilla.
Remove to serving plate. Cut into wedges and add toppings of your choice.
