These Rotisserie Chicken Quesadillas whip up in no time flat! It literally takes just a few minutes to have this quick and easy meal on the table!!

Rotisserie chicken is one of our family favorites! Rotisserie chicken is so tender and juicy!! Yum!

Ingredients for the Rotisserie Chicken Quesadillas…

Chopped up or shredded rotisserie chicken is used in these quesadillas.

I love to pick up a rotisserie chicken when I’m at the grocery store. Either it’ll be a quick supper for us, or I’ll take the meat off the chicken and freeze it for another time. Or both! This comes in sooo handy when you’re looking for a quick meal or hearty snack.

I also always like to keep a package of flour tortilla shells in the pantry or fridge. These little beauts come in so handy when you’re looking to make a quick meal!!

Shredded cheddar adds the gooey deliciousness to these quesadillas. But other cheeses that melt well, like pepperjack or marblejack, are just as yummy!

Sliced onion adds a little zip to these treat!

Top the quesadillas with your favorites!! Sour cream, guacamole, salsa or picante, lettuce, chopped tomatoes, sliced green onions, black olives…the list is long. Add as many or few toppings as you’d like. Or none at all!

Whatever your family prefers!!

Making the Quesadillas…

Re-heat the rotisserie chicken in the microwave for about a minute.

Over medium heat, place a little vegetable or olive oil in a skillet.

Place the tortilla shell in the heated oil. Sprinkle the cheese over the entire shell. Also add the onion, either over or under the cheese.

Add the chicken to half of the shell. Sprinkle a little salt and pepper over it all!!

Heat the shell about a 2 minutes. Use a spatula turner to “peek” under the shell. You want it to brown nicely, but not burn. It doesn’t take long for the shell to brown and the cheese to begin melting. Honestly, 2-3 minutes is it!!

Once the shell is a little browned, fold it in half. Remove it from the skillet onto your serving plate.

Top with your favorite quesadilla toppings!!!

I like to use a pizza cutter to cut the semi-circle quesadilla into 4 wedges so it’s easier to eat. Finger food is the best!!

Top with as many or as few of your favorite toppings! These make a great “grab-and-go” snack sans toppings, for those quick meals on the run!

These whip up so quick, you can make several at a time on the stove, or just make one after another in the same skillet!!

Sometimes we whip these up for a snack too! So fun, and so easy!!

Ingredients

  • 2 cups rotisserie chicken, chopped or shredded
  • 4 8 inch flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 sliced red onion
  • salt & pepper, to taste

Toppings:

  • guacamole
  • salsa
  • green onions
  • sliced black olives
  • lettuce
  • chopped tomatoes
  • sour cream

Instructions

  • Remove meat from rotisserie chicken. Chop or shred. Measure about 2 cups meat.
  • Heat skillet over medium heat. Add a small amount of oil, just enough to lightly coat the pan.
    Place tortilla in skillet. Sprinkle 1/4 cup cheese over the tortilla, and place some red onion slices over the cheese. Add 1/2 cup chicken over half of the tortilla.
  • Allow tortilla to brown, this takes only 1-2 minutes. Peek under the tortilla to check it! Flip in half to make a semi-circle quesadilla.
  • Remove to serving plate. Cut into wedges and add toppings of your choice.
  • Enjoy!
