Chicken Salad ~ A Delicious Easy Recipe!

Using leftover or rotisserie chicken this chicken salad is a snap to mix together!!  Serve this dish on a croissant, your favorite wrap, or on a bed of lettuce.  Using flavorful ingredients, this recipe is so yummy!!

This is one of my favorite recipes if I’m hosting a luncheon.  But sometimes I get such a craving for it I make it “just because” too!!

Ingredients in the Chicken Salad…

Slice, dice or cube up 2 cups of leftover or rotisserie chicken.

I love picking up a rotisserie chicken and using the meat for chicken dishes!  It makes life so easy, lol!!  You can cook up chicken special for this recipe, but using leftover or rotisserie chicken makes this a quick recipe!

I also like to chop up leftover celery and keep it in the freezer so I always have celery on hand for recipes!

Red onion, red grapes, mayo, sour cream, dry ranch dressing mix, salt & pepper, and shredded cheddar cheese are the other ingredients in this salad.  I also like to add chopped pecans if I have them.  Pecans add that extra flavor and crunch!!

Mixing the Chicken Salad…

There really isn’t any trick to mixing up this chicken salad.  Just begin placing all ingredients into a medium mixing bowl.  When you’ve got everything added stir it all together!  I stir it carefully so I don’t end up with chicken “mush” salad.

Cover and place the chicken salad in the fridge for at least an hour.  The more time in the fridge the more the flavors of this salad combine together.  So yummy!

Serving the Chicken Salad…

I like to serve up the chicken salad on fresh croissants.  The buttery flavor of the croissant and the rich chicken salad is the perfect flavor combination.

This salad also goes well on a wrap or bread.  If you want to cut out the carbs, serve the chicken salad on a bed of lettuce.  You can’t go wrong with any of these serving choices!!

Ingredients

  • 2 cups chicken cubed leftover or rotisserie chicken
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup celery chopped
  • 3/4 cup red grapes halved or quartered
  • 1 tablespoon red onion chopped
  • 1 tablespoon dried ranch salad dressing mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon pecans chopped

Instructions

  • Chop or cube up rotisserie chicken or leftover baked chicken. Place in a large mixing bowl.
  • Add remaining ingredients. Stir well to mix.
  • Cover and refrigerate for at least 1 hour to allow all the flavors to combine.
