Coconut Cream Cheese Cookies ~ Soft and Yummy!

Ingredients in the Coconut Cream Cheese Cookies…

Cream cheese and coconut flakes are items you might need to add to your grocery list if you want to make these cookies!  All of the other ingredients you probably have on hand in your pantry!!

These Coconut Cream Cheese Cookies use a block of cream cheese.  Along with the cream cheese you’ll add softened butter, vanilla extract, white sugar and brown sugar, baking soda, flour, salt, and sweetened coconut flakes. 

You can also add nuts as optional.  Macadamia nuts go great in these cookies, but walnuts are good also!!  I always like a little crunch in my cookies, so I usually opt for adding nuts.

Making the Cookies…

If you have a stand mixer you’ll want to use it to mix all the ingredients together!  Otherwise, good old fashioned hand mixing works just as well!!

Cream together the softened cream cheese and the softened butter.  I just let them sit out for a few hours on the counter before I make the cookies, so they soften to room temperature.

Add in the sugars and the vanilla and mix well.

Then add the flour, salt, and baking soda.  Stir it all together.  The coconut flakes and nuts (optional) get added last!

There’s no raw eggs in this recipe so… technically the dough is safe to eat right out of the bowl, lol!!

Preheat the oven to 350 degrees.  Line cookie sheets with parchment paper to prevent sticking.

Scoop cookies onto prepared sheets.  As the cookies bake they won’t spread out much at all, so you can place them fairly close together on the sheet.  When you remove the cookies to a cooling rack they’ll settle a bit and become a little more spread out.

Bake for about 15 minutes, until cookies begin to brown.

Remove to cooling rack or parchment paper on counter to cool.  Store in an airtight container.
