Seafood Pasta Salad ~ A refreshing side dish!!

This seafood pasta salad goes great as a side dish with any meal!  It’s especially refreshing to serve along with anything off of the grill.  Or serve it on it’s own as a light lunch or snack!!

Ingredients…

This seafood pasta salad uses little cooked shrimp and imitation crab meat.  I like to use the extra small frozen shrimp that are 100-150 count per pound.  I also use the chunk imitation crab so there’s no chopping or dicing involved, just dump them in!

You can really use any pasta for this seafood pasta salad.  Shells, rigatoni, macaroni…anything.  But my favorite is to use the spiral shaped rotini pasta!!  They’re just so pretty, and they keep a firmness that doesn’t get mushy once it sits in the fridge for a day.  And…spiral rotini are just springy and fun!!!

Frozen peas, chopped celery, and red onion add flavor a just a bit of crunch to the salad.

Shredded cheddar cheese adds flavor and a pretty color!!!

Mayo and sour cream go together to create the dressing that makes this salad so creamy and good.  And dill weed, Old Bay Seasoning, and Salt & Pepper make up the spices for this seafood pasta salad!!

Mixing the Seafood Pasta Salad together…

Cook ½ box of rotini pasta and let it cool.  I strain it and then put it in cold water for a bit to cool off.  Also thaw the shrimp while the pasta is being prepared.  I put them in a bowl of cold water to thaw.  It only takes about 15 minutes and they’re all thawed out and ready to use!!  Easy peasy!!!

In a large mixing bowl add the cooled pasta, thawed shrimp, package of imitation crab, frozen peas, cheese, chopped celery, and chopped red onion.

Add in the mayo and sour cream, and sprinkle the dill weed, Old Bay Seasoning, and salt & pepper over the top.

Stir it all together to mix thoroughly.  Use a spatula to scrape the spoon as you mix it together so all the mayo and sour cream gets distributed throughout.

When you dish up the seafood pasta salad you can sprinkle a little more Old Bay Seasoning on the top to make it even prettier than it already is!

This salad tastes even better if it can marinade in the fridge for a few hours before serving.  It will store well for a couple days.  Just add a little more mayo and sour cream if the salad seems dry.

This seafood pasta salad would go really well with Teriyaki Turkey Burgers or Patty Melts!!!

  • 3/4 cup mayonnaise
