These key lime cookies are a refreshing treat! With tastes of lime, white chocolate, and pecans these cookies have a burst of flavor!! And this recipe is super duper easy to make too!!!

Ingredients in Key Lime Cookies…
The ingredients for these key lime cookies include butter, shortening, sugar, brown sugar, egg, lime juice, lime zest (you’ll need 2 limes to get the amount of zest needed), and vanilla!
You can just use regular limes for this recipe if you’d like. Either key limes or regular limes work great!!
Also included is flour, baking soda, salt, white chocolate chips (yum!), and chopped pecans. You can substitute the chopped pecans for another chopped nut of your choice. Walnuts or macadamia nuts would be great too!
Mixing up the Key Lime Cookies…
Begin mixing up these cookies by creaming together the butter, shortening, and sugars.
I always let the butter sit out on the cupboard for a few hours or overnight so it’s nice and soft. This makes the process of creaming these ingredients together much easier!
To this mixture you’ll add in the egg, lime juice, lime zest, and vanilla.
You can use an electric mixer to get the dough all nice and smooth and creamy! Or use some good muscle to vigorously mix up the dough until it’s smooth!!
To this creamy mixture add in the dry ingredients. I like to add the flour in 3 batches, so it’s easier to get all mixed in good. This dough doesn’t get terribly stiff, but it’s firm enough to scoop with a cookie scooper.
The last step is to stir in the white chocolate chips and the chopped pecans!
Baking up the Cookies…
Line a baking sheet (or 2!) with parchment paper.
Use a 1” cookie scoop to drop balls of dough onto the parchment. Place the balls of dough about 2” apart, as the cookies will slightly spread when they bake up.
Bake cookies for about 15 minutes at 350 degrees, until they are lightly browned.
Remove baking sheet from oven and let cool for a minute or so, then carefully transfer them to a cooling rack to cool completely.
These cookies are especially nice with a cup of tea!!!
This recipe makes about 3 dozen cookies. These cookies freeze well, and are great to keep on hand in the freezer when you have unexpected company or are craving a sweet treat!!

- Use a 1" cookie scoop to scoop balls of dough onto parchment lined baking sheet. Place 2" apart. Bake cookies for about 15 minutes, until they are slightly browned. Remove from oven and let cool a minute on baking sheet, then transfer them to a cooling rack.
