Using a bunch of fresh asparagus, you want to choose the thin, tender stalks. These young asparagus stalks are less likely to give you the woody, bitter taste that sometimes accompanies larger asparagus.

I love to pick wild asparagus in the springtime near the lake. We have a few spots where wild asparagus grows, and it’s so fresh-tasting and tender!! But it’s hard to keep these wild asparagus patches a secret! So it’s first come, first serve!! Get to the patch early if you want the best picking, lol!!

Picking wild asparagus is like going on a treasure hunt!! You might be looking right at a stalk peeking up from the ground and not see it right away. It’s so fun to find these wild stalks of yumminess! Foraging at it’s best!!! Sometimes you only get to come home with a meal for one, but it’s still worth it!

Anywho…you don’t need to wait for spring, just pick up a bunch of asparagus at your supermarket to make this tasty dish!!

You’ll also need garlic, fresh or in the jar. And freshly grated parmesan cheese. A little olive oil, and a little salt & pepper does the trick!

Making the asparagus in the oven…

Preheat your oven to 425 degrees.

Wash your bunch of asparagus, and snap or trim the ends of the stalks.

Place the stalks on the baking sheet, and using your hands coat thoroughly with the olive oil.

Mix the diced fresh garlic, or use the diced garlic in the jar, and the salt & pepper to mix well with the asparagus. Spread the asparagus evenly on the baking sheet, in a single layer if possible.

Top the asparagus with a nice coating of the parmesan cheese. This will bake up so tasty in just 15 minutes!!

Top the baked asparagus with a little lemon juice, if you’d like to. Serve hot out of the oven!!

Ingredients

  • 1 bunch thin asparagus spears trimmed
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Instructions

  • Preheat an oven to 425 degrees F.
