Honey Ricotta Peach Crostini ~ Mmmm…

The delicious Honey Ricotta Peach Crostini is going to wow your guests!!! 

This recipe is one of our summer favorites!!!  We like to eat a light mid-day meal at the lake, and this recipe is filling enough to satisfy!  Or you can serve it as an appetizer for guests.  They’ll be sooo happy you did!

When it gets to be that time of the year that you can get your hands on some ripe and juicy peaches, you need to take advantage of it! 

I have childhood memories of my mom buying bushels of fresh peaches from an Amish family in our area.  I can still remember the smell of riding home next to the wooden bushel basket full of these fuzzy lovelies! 

My mom would can them in quart Mason jars to be pulled out all year long and made into delicious treats. 

Oh my, those are good memories indeed!  It’s amazing how memories of food and their smells can transport us back in time!  I guess that’s why it’s called comfort food, full of comforting memories!!!

Ingredients in the Honey Ricotta Peach Crostini…

You’ll need two fresh, ripe peaches.  If you don’t have fresh peaches you could use frozen peaches that you’ve thawed, but the crostini won’t be as flavorful.  Fresh peaches are best!!!

This Honey Ricotta Peach Crostini recipe also calls for ricotta cheese, honey, fresh basil, balsamic glaze, and chunks of crispy bacon.  What a flavor burst!!!

You’ll also need a baguette cut into 16 slices.  And olive oil spray!

Prepare the Honey Ricotta Peach Crostini…

Slice and fry the bacon until it’s crisp.  Drain on a paper towel and allow to cool.

Grill the Crostini…

While the bacon is cooling you can make the crostini!

Slice the baguette into ½” slices.  You’ll get about 24.  

Lightly spray a little olive oil over both sides of each of them.  Place them on a preheated grill.  You can also use your broiler to accomplish this step!

Grill the baguette slices over medium heat 1-2 minutes until they start to get golden and crispy on each side.  I even like it when they’re just a smidge charred!

Carefully check them continuously, and turn them over when one side is done.

Remove the crostini from the grill and place them on a serving platter.

Putting it all together…

Rinse and dry the peaches.  Then cut them into thin slices. 

Slice the fresh oregano into thin slices also.

In a small mixing bowl whisk together the ricotta and the honey until it’s all creamy and dreamy!

Spread about a tablespoon of honey cheese mixture on each crostini.  Top with a few peach slices. 

Drizzle the balsamic glaze over it all and sprinkle the crispy bacon and the sliced basil over the top of everything. 

Mmmmm….Delish!!!
